GlucoMenu® BBQ Chicken Salad

Recipe Ingredients:
3 cups chopped romaine lettuce
1/3 cup sliced red onions
1 red tomato, cut into chunks
2 oz. roasted chicken breast, skinless
2 T. BBQ sauce
3 T. low salt black beans
2 T. yellow corn
1 oz. low sodium mozzarella cheese
4 baked tortilla chips, broken into pieces

Recipe Directions:
  1. Cut baked chicken into strips.
  2. Place lettuce on plate.  Add tortilla chips, corn, beans, tomato, onion, and cheese.
  3. Place warm chicken on top of salad.  Drizzle with BBQ sauce
  4. Serve immediately.
  5. Makes one serving.

Calories: 355,  Carbohydrate: 40 g,  Fiber: 9 g,  Fat: 8 g,  Protein: 34 g,  Sodium: 704 mg

 
 

Tip of the Week:

If you experience hypoglycemia (low blood sugar), your doctor or diabetes educator may recommend keeping a "quick fix" of sugar with you.  Typically, these quick fixes should equal 10-15 grams of carbohydrate.  Examples include:

  • 1/2 cup orange juice,
  • 6 jelly beans,
  • 2 T. raisins, or
  • 5 Lifesavers candy.

Choose simple sugar foods that do not contain fat as fat will delay how quickly sugar goes into the blood stream (chocolate is an example of a sugar food that contains fat).  The goal with sugar foods is to increase blood sugar from a hypoglycemic state.

Training for an event can be a great way to stay motivated.  Look into upcoming walks or other physical activities for a favorite charity or cause.  The American Diabetes Association frequently sponors walks and other events.
