    GlucoMenu® Vegetable Lasagna

    Recipe Ingredients:
    12 oz. dry lasagna noodles
    1 - 26 oz. jar Classico Tomato and Pesto Pasta Sauce
    1 1/2 cups MorningStar burger style crumbles
    16 oz. lowfat ricotta cheese
    16 oz. 1% cottage cheese, no salt added
    8 oz. low sodium mozzarella cheese, shredded
    1 t. Mrs. Dash Italiano seasoning
    1 clove garlic, minced
    1 1/2 cup mushrooms, sliced
    1 1/2 cup frozen chopped spinach, thawed
    1 1/2 cup zucchini, sliced

    Recipe Directions:
    1. Simmer pasta sauce and crumbles in sauce pan.
    2. Cook noodles in boiling water al dente.  Drain.
    3. Mix ricotta, cottage cheese, spinach, garlic, and Italian seasoning.
    4. In a 9 x 12 dish, place 5-6 lasagna noodles to cover bottom of pan.
    5. Pour 1/2 of pasta sauce over noodles, spread evenly.  Pour 1/2 of cottage cheese mixture over pasta sauce, spread evenly.
    6. Place 1/2 of mushrooms and zucchini over cottage cheese.  Sprinkle 1/2 of mozzarella cheese over vegetables.
    7. Repeat layering process.
    8. Bake at 350 degrees for 40-45 minutes.  Allow to sit for 10 minutes prior to cutting and serving.
    9. Serves 9.

    Tip of the Week:

    Many people with diabetes often ask, "What can I drink?"  Beverages containing carbohydrate can increase blood sugar.  Milk, juice, and other beverages (soda pop and fruit drinks) should be worked into your meal plan and counted as carbohydrate choices.  The following drinks have minimal effects on blood sugar:

    • water,
    • sugar free drink mixes containing little or no calories,
    • decaffeinated coffee or tea, or 
    • diet sugar free soft drinks.

    Limit beverages with caffeine as these actually deplete the body of water.  Choose whole fruit more often over fruit juice to increase fiber in your diet.

    Make exercise convenient.  Convenience leads to consistency.  Choose a physical activity that you can easily fit into your lifestyle.  For example, wake up an hour early to exercise or exercise during your lunch hour at work.  Daily exercise is key so choose convenient activities.
